Joachim Splichal’s elite catering team is set to serve the prestigious award show reception for the first time, and Patina Restaurant Group commemorates the new partnership with GRAMMY-inspired cocktails across its restaurants
(LOS ANGELES, CA; February 4, 2016)—Patina Catering is honored to serve The Recording Academy® as the Official Caterer of the 58th Annual GRAMMY Celebration®. A first for the esteemed catering division of Patina Restaurant Group, the menu—designed to be enjoyed by nearly 5,000 guests during the award show reception on February 15—is a playful and vibrant celebration of sustainable, local California flavors inspired by the music and its artists. 

Under the leadership of Patina Restaurant Group Chef and Founder Joachim Splichal, the award-winning catering division has long established itself as a premier caterer on the West Coast, and holds the honor of being the official caterer for the prestigious Creative Arts Ball and the Emmy® Awards Governors Ball for the past 20 years.

Splichal is elated that Patina Catering has been selected to showcase its culinary offerings at the GRAMMY Celebration for the first time, as his team is now responsible for two of the three largest award show celebrations in Los Angeles. Sharing his goals for the celebration, he comments, “I aim to create a menu that is sophisticated, hits every note and celebrates the achievements of the artists.” 

The menu is divided into five iconic California dining destinations, giving guests the opportunity to indulge in the best of what “The Golden State” has to offer, including Baja California with “Taco Truck” bites, Napa-inspired cuisine, Santa Monica Farmers’ Market seasonal favorites, gluten-free dishes from “Beverly Hills,” and dessert from Hollywood’s “GRAMMY Land” including whimsical cotton candy trees.  

Patina Catering’s Director Kenneth Heidt adds, “We have hand-selected and trained nearly 600 of our finest staff to provide an unforgettable experience for the celebration.”  Service executed by the professional team on February 15 includes a number of themed food stations, such as a “Baja Taco Truck” with Pollo Asada and Crispy Pacific Rock Cod Street Tacos served on mini corn and flour tortillas with pico de gallo, onion, cilantro, avocado crema and Arbol chile sauce; Pepita Caesar Salad with crumbled Cotija cheese, and crispy blue corn tortilla strips; Smoked Bacon Refried Beans; and Lime Scented Spanish Long Grain Rice.

In the “Napa Wine Country” station, guests delight in Mustard Roasted Free Range Chicken with Chardonnay-mustard jus; Red Wine Braised Short Rib Grilled Cheese with cave-aged Gruyere; Weiser Farm Marble Potatoes; and Red and Gold Beet Salad with baby arugula, fresh goat cheese, and walnut oil vinaigrette.

The “Santa Monica Farmers’ Market” is a haven for herbivores, with vegetable dishes that include Caramelized Rainbow Cauliflower “Steaks” with a creamy parsnip puree, garnished with vadouvan-spiced golden raisin relish; Roasted Kabocha Squash with Vermont maple syrup and toasted pecans and thyme; Roasted Brussel Sprouts with smoked tomatoes and farro; Winter Citrus Salad with honey-sherry vinaigrette; and Cavatelli Pasta with pumpkin broth, delicata squash, kohlrabi, hazelnut brown butter, and shaved pepato cheese.

At the “Beverly Hills ‘No Gluten Here’” station, celebrities can opt out of grains with fine plates such as: Grilled Flat Iron Steak with red onion marmalade; Agave Lime Salmon; Yukon Potato Gratin; Little Gem Wedge Salad with hard cooked egg, cherry tomatoes and housemade buttermilk ranch; and Blue Lake Bean Salad with slivered almond garnish and lemon vinaigrette.

A sweet finish at “Hollywood GRAMMY Land” features a striking display of sweets, including Blue Chocolate Popcorn; Pop Rocks Shooters; Liquid Chocolate S’mores; Crème Puffs dusted with edible glitter and Sugared Bombolini atop an assortment of panna cotta (chocolate-coriander, bourbon caramel, and bubble gum-infused) and Cotton Candy Trees where guests can grab nibbles from its branches.

In addition to curating a menu fit for the star-studded celebration, Patina Restaurant Group has also developed five GRAMMY-inspired cocktails to be enjoyed at its Los Angeles restaurants from now until February 15. The unique beverage creations have been crafted to honor the Record of the Year nominees and include Gon’ Give It to You, inspired by the tune “Uptown Funk” with a riff on the classic Gin Fizz, as well as She’ll Be the Death of Me as homage to The Weeknd’s “Can’t Feel My Face,” which combines heat from chili liquor with cool, fresh mint to amuse the senses. In Los Angeles, these cocktails can be enjoyed at restaurants including Nick & Stef’s Steakhouse, Ray’s & Stark Bar, Café Pinot, Pinot Grill, and Kendall’s Brasserie & Bar.
